My wife and I started Pilates five months ago at Coe-Dynamics. I have had an ongoing knee problem that has prevented me from running over six years.  The Pilates classes have strengthened my core and caused me to be aware of my balance.  Through the principles taught, I have been able to correct my running form and am now up to four miles per day! Tracy, the owner, and Kelly are excellent trainers and coaches. The studio is clean and parking is excellent.  I highly recommend them!

Recent Menus have included:

Soups

Tuscan Style Minestrone Soup: Tomatoes, zucchini, yellow squash, green beans, carrots, and celery seasoned with garlic, onions, thyme and parsley in white wine and a homemade vegetable stock.

Zucchini and Spinach with Roasted Leeks: Non-dairy but creamy soup with organic zucchini, spinach and roasted leeks seasoned with garlic onions and fennel with a touch of nutmeg in a homemade vegetable broth.

Gingered Butternut Squash Soup with Roasted Pumpkin Seeds: Butternut squash seasoned with garlic, new ginger and onions in a homemade vegetable stock.

Salads

Nutty Quinoa Salad: Quinoa with plums, scallions, almonds, Clementines, cranberries and seasoned with mint and orange zest.

Autumn Apple and Walnut Salad: Apples, celery, scallions and walnuts in a walnut vinaigrette.

Quinoa Tabbouleh: Instead of the traditional couscous, quinoa is gluten-free and packed with protein.  Added to that are tomatoes, parsley, mint and scallions with a touch of lemon juice and olive oil.

EVERY WEEK:

POTASSIUM BROTH: This is the Potassium Broth recipe I use during a cleanse, it’s full of minerals & potassium, it is also great for a cold/flu. Just broth… made from lots of organic veggies with no added salt (the natural minerals make it taste great!). Drinking a couple mugs of this broth will help you feel full and satisfied… like magic… and is so good for you!
